Raspberry Brownies with White Chocolate Chips








(ADAPTED FROM FAT WITCH BAKERY BOOK)


1¾ sticks unsalted butter
½ cup + 1tbsp bittersweet chocolate chips
4 eggs
1 cup granulated sugar
1 tsp vanilla extract
½ cup + 1 tbsp flour
¼ tsp salt
½ cup white choc chips
½ cup seedless raspberry jam


Grease a 9x9 pan with nonstick foil.  Preheat the oven to 350 degrees. Melt the butter and bittersweet chocolate over in the microwave. Set aside. While chocolate mixture is cooling, beat the eggs, sugar and vanilla together in a mixing bowl until smooth. Add the cooled chocolate and keep mixing until thoroughly combined. Add flour and salt stirring until no white streaks remain. Fold in the white chocolate.Spread only half the batter into baking tin, then spread the preserves/jam on top, avoiding the edges. Refrigerate for 20 minutes, then spread the remaining brownie batter over the jam. Don't worry if the jam and brownie mixture get mixed up a bit. Bake for 35 minutes. Cool for 1 hour on a wire rack.

OREO CHEESECAKE BARS ON A CHOCOLATE CHIP COOKIE CRUST TOPPED WITH A CHOCOLATE GLAZE, RASPBERRY M & M'S AND MORE OREOS!



 
 


THIS VALENTINE'S RECIPE STARTS OFF SIMPLE BY USING PILLSBURY COOKIE DOUGH!

1.  LINE AN 8X8 PAN WITH A NONSTICK FOIL SLING.
2.  PRESS IN 8 OUNCES OF CHOCOLATE CHIP COOKIE DOUGH.  
3.  BAKE AT 350 FOR 14 MINUTES.
4.  LINE THE COOKIE DOUGH BAKED CRUST WITH 16 OREOS.

5.  MAKE THE CHEESECAKE:
  • electric mix the following until smooth:
  • 12 oz. cream cheese, soft
  • 1/3 c. sugar
  • 1 egg

6.  Pour the cheesecake over the Oreos and bake at 350 for 35 minutes.

7.  Make the glaze:  
In the microwave heat:
 1/2c. heavy cream
 4 ounces chocolate chips until smooth.  Pour on bars.  Top with chopped Oreos and raspberry M & M's.  Chill a few hours.  You can speed this in the freezer.  These are easier to cut when very cold!!!!  Enjoy!

Back to school raspberry granola bars and my (many) obsessions



I’m someone who obsesses with certain things from time to time – directors, actors, music, you name it. And food, of course. I obsessed with Ralph Fiennes so badly after “Schindler’s List” that I had to watch each and every film with him – and that led me to Kathryn Bigelow’s “Strange Days” (which is far better than “The Hurt Locker”, imho). Did I mention I was about 17 back then? Well. ;)
