ITALIAN LEMON SHRIMP



Ingredients
1 1/2 lb shrimp, shelled and deveined
1 stick butter
1 lemon, sliced thin
1 pack dry Italian seasoning packet
Directions
1. Preheat oven to 350 degrees. Line jelly roll pan (with sides) with nonstick foil.
2. Melt butter in the oven on the lined cookie sheet. Lay lemon slices on melted butter. Lay shrimp on top of butter and lemons. Sprinkle the Italian dressing mix on top of shrimp. Bake at 350 degrees for 15 minutes, until light golden brown.

SCRUMPTIOUS SHRIMP THAT WILL KNOCK YOUR SOCKS OFF!

SO EASY! ONE PAN! SCRUMPTIOUS TOO!











INGREDIENTS:
1 STICK BUTTER (I USED GRASSFED-THE GOOD STUFF!!!)
2 POUNDS SHRIMP, DESHELLED/DEVEINED (thawed and dried)
SEA SALT, PAPRIKA, PEPPER,GARLIC POWDER, TURMERIC
1 1/2 LEMONS SLICED THINLY

Diretions:
1. Line a baking pan (with sides) with nonstick foil.
2.  Lay the butter on the pan and place in the oven until melted: 3-4 mins.
3. Remove and lay lemon slices on the pan.
4.  Place the shrimp on the lemon slices.  Season with the above spices evenly & generously and then flip and season the other side.
5.  Bake at 350 for 10 mins.  Flip shrimp over and bake another 10 minutes or until fully cooked through.  Serve over pasta or rice using the rest of the lemon/butter sauce in the pan!

YOU KNOW THE COCONUT SHRIMP THEY SERVE AT WEDDINGS? THIS MUST BE THEIR RECIPE!!!!!!




THIS RECIPE SURPASSED MY EXPECTATIONS!!!! THE COATING WAS INCREDIBLY CRISPY AND STAYED ON PERFECTLY! IT'S A BIT TEDIOUS BREADING EACH SHRIMP BUT WELL WORTH THE EFFORT IF YOU HAVE THE TIME ONE NIGHT!  I MADE OURS GLUTEN FREE AND USED BETTER BATTER FLOUR IN PLACE OF THE ALL PURPOSE.
1 lb. Raw Shrimp (defrosted, pre-cleaned/peeled)
1 cup Flour ( I used Better Batter Gluten Free)
1 cup Cornstarch
4 tsp. Baking Powder
Pinch of Salt
1 tsp. paprika
1 Cup cold Water (I needed a lot more than a cup-add slowly after the 1c until a thick pancake batter consistency)
14 ounce bag Shredded and Sweetened Coconut

Mix flour, cornstarch, salt, paprika ad baking powder.  Add water until a thick pancake batter consistency.  Dip shrimp in batter then into the coconut, pressing it on.  I fried these in avocado oil from Chosen Foods.  Sprinkle sea salt on top once both sides are fried golden brown.



 Dip in apricot jam if deisred or orange marmalade with a splash of fresh orange juice-But it was so good that ours required no dipping of any kind!!!

BAKED COCONUT SHRIMP WITH APRICOT DIPPING SAUCE



THIS WAS A FAST, EASY WAY TO MAKE COCONUT SHRIMP.  OF COURSE, FRIED IS STILL MY FAVORITE-BUT ON A BUSY WEEKNIGHT THIS WAS MUCH QUICKER!

THIS RECIPE IS FROM HERE

IN A NUT SHELL, THIS IS HOW I MADE IT.  
  1.  PAT SHRIMP DRY.
  2. DIP SHRIMP FIRST IN EGG.
  3. NEXT, DIP IT INTO SEASONED PANKO CRUMBS,
  4. PLACE ON A NONSTICK FOIL LINED PAN.
  5. SPRINKLE AND PRESS COCONUT ON TOP OF ALL THE SHRIMPS. (I CHOSE TO DO IT THIS WAY BECAUSE THE COCONUT WAS NOT STICKING WELL TO THE SHRIMP.)
  6. BAKE AT 425 FOR 15 MINUTES UNTIL NICELY BROWNED

APRICOT DIPPING SAUCE:
  1. 3/4 CUP APRICOT SAUCE
  2. 1/2 TSP. STONE GROUND MUSTARD
COOK TOGETHER IN A SAUCE PAN UNTIL MELTED

Singapore Street Noodles



The first time I had this yummy noodle dish was in Singapore and they tried to hurt me. It was delicious but the meal's enticing flavor belied the evil lurking within. The noodles resulted in one of the longest bus rides in history, where I contemplated stomach churning, how mortifying it would be for me to get sick on a crowded Singapore bus.

I've made peace with this dish and it has long since made up for the wrongs it has done to me.

Not so Humble's Singapore Street Noodles (The non-evil kind):

150 grams of Rice Vermicelli noodles

2 tablespoons vegetable or peanut oil
1/2 onion chopped
2 cloves garlic minced
1 pound pork loin sliced sliced thinly
2 cups chopped chinese cabbage
2 thai chilies seeded and chopped
2 cups broccli florrets
1 1/2 cups small cooked shrimp
1 tablespoon turmeric
2-4 teaspoons green thai curry paste

chopped cilantro
shredded green onion


Cook or soak the noodles according to the package direction. Unless you have these noodles and then just treat them like you do other rice noodles (soak in hot water till tender) and hope for the best. I tried out a new brand today and though they were nearly twice as much as my normal rice vermicelli they were not as sturdy. Delicious though, similar to Japanese somen.

In your wok heat oil and add onion and garlic and cook a minute or two till the onion softens. Add the sliced pork and cook for a few minutes till pork acquires a little color. Add the broccoli and 1/2 cup of water and cover the wok for 2 minutes. Add the cabbage, chilies, and shrimp and stir fry a minute longer. Mix the curry paste with a few tablespoons of water and add it with the turmeric to the wok. Add the cooked rice noodles and gently toss with a pair of forks. Serve garnished with the green onion and cilantro.
