Healthful benefits to Cook Cupcakes at home

Several of us who engage in higher calorie, sweet taste of cupcakes. While we fully understand that cupcakes will be desired not the best option for a healthy snack.

So what can we do to minimize some of the calories or make them a little healthier? Just bake them at home instead of buying them, at retailer can give us a bit of an advantage. Below are some reasons why.

Cupcakes are made in the bakery or in the stores are crammed with junk food. Cupcakes you produce can only have reduced the calories by substituting different ingredients to give you and your family with a healthier cupcake.

In addition, you can use fresh fruit to increase their nutritional value. Most cupcakes are not fruits mixed in them and it does not have the health advantage would do if they were included. By incorporating fruit into your recipe, you can provide an additional daily serving of fruit to your cupcakes and help you and your family.

In addition, you can switch all purpose flour with half whole wheat flour. This will not only lower the calorie count but the weight of your cupcakes and improve its nutritional value.

There are many other ways to increase the health benefit of cupcakes with essentially prepare and bake them at home in your own kitchen. Many of us love cupcakes and now you have some new reasons to love them and make them a healthy snack. Just make sure you understand what it is you put your cupcakes and what these ingredients can do for your family. Just a small simple changes can lead to greater health benefits for you and your family. Just because your favorite snacks are higher in calories doesn't mean you and your family can enjoy them. If you are the Baker's all possible!

VANILLA CUPCAKES WITH BUTTERCREAM FROSTING AND HOMEMADE ROYAL ICING CANDY TOPPERS

 CUTE BAKING CUPS, RIGHT?  THEY BAKED FREE STANDING ON A COOKIE SHEET....NO MUFFIN TIN REQUIRED!!! YOU CAN FIND THEM HERE AT BAKERS STOCK!
 
VANILLA CUPCAKES..THE BEST!!!

1 ¾ cups plus 2 tablespoons flour
¾ teaspoon baking powder
¼ teaspoon salt
¾ cup butter, at room temperature
1 ½ cups sugar
3 eggs
¾ cup whole milk
1 ½ teaspoons vanilla extract

BEAT BUTTER AND SUGAR. ADD EGGS ONE AT A TIME. ADD VANILLA. COMBINE DRY INGREDIENTS AND ADD, ALTERNATING WITH THE MILK. DIVIDE IN MUFFIN TINS AND BAKE AT 350 20-23 MINS UNTIL TESTER COMES OUT CLEAN. COOL COMPLETELY BEFORE FROSTING.




FROSTING!!!!!
ELECTRIC MIX ALL UNTIL FLUFFY...

BEAT 2 STICKS BUTTER AND ADD 4 CUPS CONFECTIONERS SUGAR. ADD 1/2 CUP MILK, 2 TSP. VANILLA AND 4 MORE CUPS SUGAR. BEAT UNTIL CREAMY. COLOR AS DESIRED.  I MADE ROYAL ICING TO CREATE THE CANDY TOPPERS.

TEDDY BEAR PICNIC





Super Simple.
1. Bake a box mix or homemade cupcakes.
2. Tint vanilla icing blue-I made 2 different blue shades to swirl.
3.  Frost cupcakes and sprinkle on graham cracker crumbs for sand.
4. insert umbrellas in the sand.
5.  Push teddy grahams through gummi savers and lay on the "water."
6.  Add goldfish!

IT'S A PINK AND GRAY PIGLET THEME FOR THIS CUTIE'S BIRTHDAY PARTY!! THESE ARE WILTON CUPS FROM MICHAELS AND I FILLED EACH WITH 2 3/8 OUNCES BATTER.  THEY BAKED ABOUT 32 MINUTES!  REGULAR SIZED CUPS BAKE ABOUT 20-23 MINS.

HOMEMADE COPYCAT HOSTESS CUPCAKES...ONLY YUMMIER!!!

 
 












For the CUPCAKES-24 cupcakes, line 2 muffin tins with cupcake wrappers.
  • 2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cups cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 cup hot coffee(I used Green Mountain Black Magic from Big Cat Coffees)
  • 1/2 cup canola oil
  • 2 large eggs
  • 2 teaspoons vanilla

    1. Preheat oven to 350.
    2. In ta mixer, combine dry ingredients.
    3. Add in the buttermilk, hot coffee, oil, eggs, and vanilla. Mix on medium speed until well combined 1-2 mins.
    4. Divide batter among cupcake pans and bake until a toothpick inserted comes out almost clean, about 15 minutes. Let cakes cool completely.
Make Cream
WHIPPED CREAM FILLING:  
  • 2 tablespoons cold water
  • 1 1/4 teaspoons unflavored gelatin
  • 1 1/2 cups chilled heavy cream
  • 3/4 cup powdered sugar

  1. Add the cold water to a small bowl, then sprinkle the gelatin over it. Allow to sit for about 10 minutes, until it has set.
  2. In a small skillet, add about 1/2-inch of water, and heat over medium-high heat. Place the small bowl with the gelatin directly inside the skillet. Stir the gelatin until it is melted, about 2 minutes. Remove the bowl from the skillet.
  3. In the mixer, use whisk attachment and beat the heavy cream & powdered sugar.  Beat on high to soft peaks.  Add in the melted gelatin mixture and continue to beat until stiff peaks have formed. 
  4. Pipe the cream into the centers of the cupcakes using a pastry bag.
Ganache
In microwave, heat:
1/2 cup heavy cream.  Pour it over 5 ounces dark chocolate chips. Let sit 3 minutes then stir smooth.  Let thicken 5-10 minutes.  Dip cupcake tops into the ganache and chill to set.

I used canned frosting in a piping bag for the white details!  Have fun!!!!

OREO & PEANUT BUTTER BROWNIE CUPS!



MY FRIEND POSTED THIS CUTIE IDEA ON FACEBOOK AND SAID I HAD TO MAKE IT.  WHO AM I TO ARGUE.




1 box brownie mix, I used Pillsbury
24 Oreos
1/2 cup creamy peanut butter
*chopped peanut butter cups!
1. Preheat oven to 350 degrees F. and line 12 muffin cup with paper liners.
2. Prepare brownies by package instructions.  

3. For each cupcake you're going to take an Oreo and spread on some peanut-top with another Oreo and add peanut butter on top of that.  Then sit this little tower in your paper liner.  Repeat for each one.   

4. Pour brownie batter over each stacked Oreo tower and let it spill over the sides of the cookies.  The extra batter I baked in a second muffin tin and laid a whole oreo in the bottom of each!  

5. Bake the muffin tins for about 20-22 minutes at 350. 

6.  Once you remove from the oven, I immediately sprinkled chopped peanut butter cups on top-pressing lightly and placed the whole tray in the fridge so the pb cups wouldn't melt. Cool and serve!
Makes 12 "cupcakes"

Vanilla cupcakes with blackcurrant preserves icing

Lime cupcakes and a crazy dream I had the other night



I had one crazy dream a couple of nights ago: I dreamt that people were planning a remake of “Blade Runner” (can’t tell you how much I adore that movie) and Daniel Craig had been chosen to play Roy Batty. Don’t know about you, but in my dream it seemed to be a very smart decision. :D

I guess that the only thing I love as much as movies are citrus flavors. So there you have it, lime cupcakes. :

Mince pie cupcakes with brandy butter icing



If I tell you that I kept this recipe in a very special place since January already thinking of this Christmas series will you promise not to think I am insane? :)

These cupcakes are incredibly tender and moist, one of the most delicious cupcakes I have made so far; they are so good that a simpler icing could be used with great results – or no icing at all.

White Christmas Cupcakes



Tis the season for White Christmas Cupcakes.

Though in the Seattle area, we are more accustomed to wet holidays than the white variety… which I'm absolutely not complaining about, since my car readily doubles as a sled when there is so much as a blush of frost on the ground.

I'll take frosty christmas cupcakes over the real thing any day. More so today, since I was having a raging pregnancy sugar craving.

Raspberry trifle cupcakes
