Gingerbread brownies and a movie I should have seen in 2006

GANACHE POKE BROWNIES
1 tablespoon plus 3/4 cup (1 1/2 sticks) unsalted butter
3/4 cup all-purpose flour, sifted
3 (1-ounce) squares unsweetened baking chocolate
1 1/2 cups granulated sugar
3 large eggs
1 1/2 teaspoons vanilla extract
Fudgy Topping, recipe follows
Directions
Brownies: Make sure the oven rack is in the center position and preheat the oven to 350 degrees F. Line a 9 by 13-inch baking pan with nonstick foil or grease foil with the 1 tablespoon butter listed.
Place the remaining 1 1/2 sticks of butter and the chocolate in a large glass measuring cup or medium glass bowl, cover with plastic wrap, and microwave on high power for 1 minute. Remove from the microwave, uncover, and stir well. Return the butter and chocolate mixture to the microwave and cook 30 to 60 seconds, or until the chocolate is melted. (If you don't have a microwave, melt the butter and chocolate in the top of a double boiler.) Pour the melted chocolate mixture into a large mixing bowl. Add the granulated sugar and whisk until smooth. Add 1/4 cup of the flour and whisk to combine. Crack and add 1 egg and whisk to combine. Alternate adding the remaining flour and eggs, whisking well after each addition. Stir in the vanilla and mix well. Pour the batter into the prepared pan. Bake until the brownies rise and a toothpick inserted into the center of the pan comes out clean, about 25-30 minutes.
Remove the pan from the oven. Use the handle of a wooden spoon to poke holes into the brownies every 1 to 2 inches. While it is still warm, pour the Fudgy Topping over the brownies and smooth it with a rubber spatula. Let pan cool on a wire rack for at least 1 hour before serving brownies.
Fudgy Topping:
1/2 cup (1 stick) unsalted butter
1/4 cup unsweetened cocoa powder
6 tablespoons heavy cream
1 pound confectioners' sugar
1 teaspoon vanilla extract
Combine the butter, cocoa powder, and ceam in a medium saucepan and heat until the butter melts and the mixture just comes to a boil. Remove from the heat and whisk until smooth. Sift the confectioners' sugar into a medium mixing bowl. Add the chocolate mixture and vanilla extract to the powdered sugar and whisk until smooth.

ROLO BROWNIES WITH FUDGE TOPPING
STEP ONE: Make Brownies
4 eggs

1 teaspoon salt
1 teaspoon baking powder
1 Tablespoon vanilla extract

1 teaspoon baking powder

2 1/4 cups sugar
2 1/4 cups sugar

Directions:
Preheat oven to 350 and line 9"x13" pan with nonstick foil. In a large bowl, add 4 eggs, and beat with cocoa, salt, baking powder, and vanilla. Stir until fully combined and smooth.In the microwave, melt butter. When melted, add sugar, and stir to combine.Add warm butter/sugar mixture to the egg/cocoa mixture, stirring until smooth. Add the flour and stir until fully incorporated. Spread batter into prepared pan, and smooth as needed.Bake brownies about 30 minutes. Test for doneness by inserting a toothpick. You should find moist crumbs.
STEP 2-Pour on a 1/2 cup caramel sauce. Use jarred or Homemade! (Or what I did was to microwave 1 bag Kraft caramel bits with 2T. heavy cream until smooth)
Step 3-Cut 2 cups unwrapped Rolo candies in half and lay on top of the caramel.
Step 4-Make Fudge Topping
1 (14 oz) can sweetened condensed milk
3 cups semi sweet chocolate chips
In a microwave safe bowl, melt sweetened condensed milk and chocolate chips together gently. Stir and immediately spread over Rolos with an off-set spatula. Chill a few hours before cutting. Can microwave each brownie bar before serving to melt the caramel! Sprinkle with sea salt, if desired!

Directions:
Preheat oven to 350 degrees and line 9x13 pan with nonstick foil. Melt butter in microwave and mix with cocoa and sugar. Add eggs and vanilla. Add flour. Pour into pan and bake 20-25 mins.
Frost while still warm.

Salty-nougat fudge brownies and the end of the best TV show ever made
Many, many years ago I watched the series finale of my favorite TV comedy and that left a bitter taste in my mouth: to simply put it, I did not like it at all. To this day I cannot believe how something so brilliant could end up so poorly – it seemed like everyone creatively involved in Seinfeld suddenly got lazy about the whole thing (or fed up, I don’t know).
Up until weeks ago that was the
TRIPLE LAYER REESE'S PIECES OREO BROWNIES
Brownie layer:
4 eggs
1 1/4 cups unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking powder
1 Tablespoon (3 teaspoons) vanilla extract
1 cup (2 sticks) butter
2 1/4 cups sugar
1 1/2 cups all purpose flour

Directions:
Preheat oven to 350 and line 9"x13" pan with nonstick foil.
In a large bowl, add 4 eggs, and beat with cocoa, salt, baking powder, and vanilla. Stir until fully combined and smooth.
In the microwave, melt butter. When melted, add sugar, and stir to combine.
Add warm butter/sugar mixture to the egg/cocoa mixture, stirring until smooth.
Add the flour to batter and stir until fully incorporated.
Spread batter into prepared pan, and smooth as needed. Press Oreos into the batter to line pan.

MILKYWAY BROWNIES
1. Prepare your favorite box or homemade brownies in an 8x8 pan and bake according to the box or recipe directions. Chill in freezer when slightly cool.
2. Chocolate Nougat:
1 cup chocolate chips
1 cup marshmallow fluff
3 1/2 tablespoons evaporated milk, divided
Melt choc chips in microwave until smooth. Stir fluff and 1 1/2 tablespoons of evaporated milk into the melted chocolate chips. Pour and spread immediately over brownies in pan. Return to freezer.
3. Caramel Layer
1 bag Kraft caramels, unwrapped
2 TablespoonS evaporated milk
Melt caramels with the evap. milk in the microwave until smooth. Pour over nougat layer and return to freezer.
4. Topping:
MELT IN THE MICROWAVE:
1 STICK BUTTER & 6 OUNCES BITTERSWEET CHOCOLATE CHIPS.
STIR SMOOTH AND ADD 4 TSP. LIGHT CORN SYRUP.
POUR SMOOTHLY ON BARS AND CHILL UNTIL SET. CUT WITH A BIG KNIFE!

FAT WITCH BROWNIES
Ingredients:
1 stick plus 6 more T. butter
1/2 cup + 2 Tbsp bittersweet chocolate chips (I used Ghiradelli)
1 1/4 c. sugar
4 eggs
1 tsp vanilla extract
1/2 cup + 2 T. flour (TO MAKE GLUTEN FREE, USE CUP4CUP FLOUR)
dash of kosher salt
Line 9x9 baking pan with nonstick foil. Preheat oven 350F. Melt all of the butter and chocolate chips together in the microwave. Do 30 second intervals and stir so you do not burn it! let cool.
In a bowl, mix sugar, eggs and vanilla. Add the cool chocolate and mix until well blended. Add flour & salt. Marry all the ingredients :-) by stirring! Pour into the pan and bake 30-35 minutes until toothpick does not come out wet. Cool completely and cut into Large squares. Can dust with powdered sugar or serve warm with ice cream!
PEANUT BUTTER CHEESECAKE BROWNIE BARS WITH GANACHE
This brownie recipe wold be spectacular even on its own!
Brownies:
3/4 cup (1 1/2 sticks) butter
4 ounces bittersweet chocolate, chopped
2 eggs
3/4 cups sugar
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1/4 cup all-purpose flour
- In the microwave, melt butter and chocolate. Let cool a bit.
- Beat in a mixer the eggs and sugar. Add vanilla and salt.
- Slowly add in the chocolate/butter mixture.
- Fold in the flour.
- Bake in an 8x8 pan lined with parchment or nonstick foil for about 30 minutes AT 350 DEGREES. Let cool.
1 cup heavy whipping cream
1 teaspoon sugar
8 ounces cream cheese, at room temperature
1/2 cup creamy peanut butter
- Beat heavy cream to soft peaks and add sugar. Transfer to a bowl.
- Beat the cream cheese and peanut butter.
- Fold whipped cream into the peanut butter mixture.
- Spread on top of the thick brownie layer,
Chocolate Glaze: (love this glaze!!!! Cuts awesome!!!!!)
2 & 1/4 ounces unsalted butter
4 ounces dark chocolate
1 & 1/2 teaspoons light corn syrup
- Microwave the butter and chocolate until smooth.
- Stir in the corn syrup.
- Pour over bars and chill until firm.
- Cut using a sharp knife and clean it in between cuts!
CHOCOLATE FROSTED BROWNIES WITH M & M'S
OMG! BEST CHEWY BROWNIES AND FROSTING EVEEERRRRRRR!!!!!!
CHEWY COCOA BROWNIES:
Ingredients
- 1 2/3 cups granulated sugar
- 3/4 cup (1 1/2 sticks) butter or margarine, melted
- 2 tablespoons water
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/3 cups all-purpose flour
- 3/4 cup HERSHEY COCOA POWDER
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Directions
PREHEAT oven to 350º F. Grease 13 x 9-inch baking pan.COMBINE granulated sugar, butter and water in large bowl. Stir in eggs and vanilla extract. Combine flour, cocoa, baking powder and salt in medium bowl; stir into sugar mixture. Spread into prepared baking pan.
BAKE for 18 to 25 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack. TOP WITH FROSTING.

Nib praliné brownies + a new band (at least new to me)
Days ago, while looking for good haircuts for fine hair (something that would make me look like I have tons of hair, which unfortunately is not true) I ended up on this lovely website and watching one of the videos I was introduced to “Foster the People” – I got hooked and can’t stop listening to their songs, especially “Helena Beat” and “I Would Do Anything For You”. Such a nice discovery.
FOR THE FUDGY BROWNIE LOVERS
Brownies:
3/4 cup (1 1/2 sticks) butter
4 ounces bittersweet chocolate, chopped
2 eggs
3/4 cups sugar
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1/4 cup all-purpose flour
- In the microwave, melt butter and chocolate. Let cool a bit.
- Beat in a mixer the eggs and sugar for 4 minutes on high. Add vanilla and salt.
- Slowly add in the chocolate/butter mixture.
- Fold in the flour.

There has been a change of plans around here: Somerset Maugham will have to wait a while, since I decided to buy "Gone Girl" after reading that turning the book into a movie is David Fincher’s next project. :)
Two friends of mine have told me that book is great and that it will probably cost me hours of sleeping – like the Millennium trilogy, years ago – and I cannot wait to start reading it.

Milky Way Brownies
Ingredients:
Brownie layer (adapted from Hershey's)
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/4 cup cream
1/2 cup flour
1/3 cup cocoa, sifted
1/2 cup (1 sticks) butter, melted
1 cups sugar
1 teaspoon vanilla
Chocolate Fluff Layer
1 cup semisweet chocolate chips
1 cup Marshmallow Creme
1 1/2 tablespoons heavy cream
Caramel Layer
8 ounces caramels (I used the caramel bits)
1 1/2 tablespoons cream
Chocolate Topping
1 cup semisweet chocolate chips
1 teaspoon vegetable oil
Instructions:
Preheat oven to 350°. Line 8 x 8 pan with nonstick foil.
Stir together butter, sugar, flour, cocoa, baking powder, eggs, cream and vanilla in large bowl; beat till all combined. Spread batter in prepared pan.
Bake 25-30 minutes or until brownies begin to pull away from sides of pan. Cool completely.
Make fluff layer by melting chocolate chips in microwave with cream. Once smooth, stir in marshmallow creme till well combined. Spread over cooled brownies.
Make caramel layer by melting caramels with cream in microwave. Pour over fluff layer & spread into an even layer.
Make chocolate topping by melting chocolate chips with oil in microwave till smooth. Pour over caramel and spread with an offset spatula. Chill at least 2 hours before cutting (use a knife dipped in very hot water, then dried to cut). Chill until ready to serve.
Note: I forgot to add the cream for the fluff layer and it still came out great! Oops! LOL

REESE'S PUMPKINS IN JUNE? HOW FUN IS THAT! I HAD TO USE UP THE LAST OF MY HALLOWEEN PUMPKINS BUT OF COURSE, REGULAR REESE'S CUPS WILL WORK PERFECTLY HERE! JUST USE ENOUGH TO COVER THE ENTIRE PAN!
Ingredients:
1 cup butter
2 cups sugar
2 tsp. vanilla extract

1 cup all purpose flour

1/4 tsp. salt
16-24 Reese's peanut butter cups (snack size) (#needed will vary on what shape pb cups you use)

Stir in sugar and vanilla extract. Add eggs, one at a time, and incorporating each egg in before adding another one. Stir in the dry ingredients. Pour half the batter into the prepared baking pan and place Reese's cups next to each other. Pour the rest of the batter on top of the Reese's cups, covering them. Spread the batter gently with an offset spatula to make sure everything is covered.
