S'MORES CREAM CHEESE POUND CAKE



First, you'll need to make some cream cheese pound cake.  The best ever! Click here for the recipe!

After the cake is totally cooled or a day old you will cut fairly thick slices.  For each serving cut 2 slices and lay on a nonstick foil lined pan.  On one slice place 3 marshmallow halves. The other slice stays plain.  Broil both slices just until the marshmallows are nicely toasted.  Remove and immediately lay on half a Hershey bar that was room temp. (Cold chocolate won't melt as well.) Top with the other slice and dig in!

Back from vacation with fresh orange pound cake with passion fruit icing

After a couple of weeks on vacation I am back home, tired and immensely happy. I haven’t baked in a while but have a delicious cake recipe to share with you today, something I prepared weeks ago and that turned out really good. The passion fruit icing is completely optional: in fact, I personally liked the cake better without it.

1. CUT THE POUND CAKE INTO SMALL PIECES.

CREAM CHEESE POUND CAKE TOPPED WITH HOMEMADE JAM & BERRIES

STRAWBERRY JAM RECIPE CLICK HERE

INGREDIENTS:
Cream Cheese Pound Cake
1 (8 ounce) package cream cheese
1 1/2 cups butter
3 cups white sugar
6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract

Directions:
1. Preheat oven to 325 degrees F grease and flour a 10 inch tube pan.
2. In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
3. Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.
4. Pour into a 10 inch tube pan. Bake at 325 degrees F for 1 hour and 20 minutes. (I BAKE MINE FOR 1 HOUR AND 20 MINS AND THEN LOOSELY COVER WITH FOIL FOR AN ADDITIONAL 2O MINS.-check yours at 1 hr. 20 and see because ovens do vary.)

BEST EVER POUND CAKE-HANDS DOWN!!!!


INGREDIENTS:
Cream Cheese Pound Cake
1 (8 ounce) package cream cheese
1 1/2 cups butter
3 cups white sugar
6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract

Directions:

1. Preheat oven to 325 degrees F grease and flour a 10 inch tube pan. (I spray mine with coconut oil spray!)
2. In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
3. Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.
4. Pour into a 10 inch tube pan. Bake at 325 degrees F for 1 hour and 20 minutes (I baked mine 1 hour 20 mins and then loosely covered with foil for an additional 20 to be sure it was cooked through-this timing was perfect for me-any less and it would have been undercooked.  Judge yours as it bakes as oven can vary.) COOL COMPLETELY BEFORE CUTTING!

Fresh lemon pound cake

Frangipane ripple chocolate pound cake



I love almonds – they’re my favorite nut. But for far too long I avoided recipes that called for almond paste because I’ve never seen the ingredient around here. Then it suddenly hit me: if I made eggnog from scratch for a pound cake recipe, why not almond paste? I do not know why it took my brain so long to come to that conclusion. :)

Peanut butter pound cake with coconut topping



Like the lovely Nina, I am, too, a pound cake addict: they are simple to make, taste great – and stay that way for a good couple of days – and after that can be turned into delicious toast.

This cake is fantastic and the topping is just as good – I “accidentally” left some in the pan after icing the cake and had to eat it with a spoon. :)

Chestnut pound cake



A very dear friend of mine got me a package of chestnut flour as a gift – yes, we’re the kind of people who love giving/getting food as gifts. :)
