EUROPEAN BUTTER COOKIES FOR VALENTINE'S DAY


IS PLUGRA YUMMY? IT SURE IS!  DON'T HAVE ANY? THIS RECIPE WORKS AWESOME WITH REGULAR SALTED BUTTER, TOO!

MY EURPOEAN BUTTER COOKIE RECIPE:
PREHEAT OVEN TO 350 AND LINE COOKIE SHEETS WITH PARCHMENT
BEAT:
3 YOLKS
1 3/4C. CONFECTIONER'S SUGAR

4 STICKS SOFTENED BUTTER
THEN ADD:
4 1/2 C. FLOUR 
ROLL COOKIES OUT. CUT WITH COOKIE CUTTERS.  BAKE ABOUT10-12 MINS DEPENDING ON SIZE.

ROYAL ICING FOR DECORATING:

Ingredients


  • 1 pound confectioners' sugar
  • 3 tablespoons meringue powder
  • Scant 1/2 cup water

Directions

  1. Beat ingredients in a mixer bowl on low speed until smooth, about 7 minutes. If icing is too thick, add more water; if too thin, beat 2 to 3 minutes more.

DECORATE COOKIES WITH YOUR ROYAL ICING HOWEVER YOU'D LIKE. ONCE DRY, ADD A DAB OF ICING AS A "GLUE" AND ATTACH THE COOKIES TO STACK THEM!

CRANBERRY DOUBLE CHIPPERS!







THESE COOKIES WILL BE MUSIC TO YOUR TASTE BUDS!


 Cranberry double chippers


Ingredients: 

3/4 c. salted butter, softened 

3/4 c. brown sugar  (I used dark brown)

1/4 c. granulated sugar 

1 egg 

2 tsp. vanilla extract 

2 c. all purpose flour 

2 tsp. cornstarch 

1 tsp. baking soda 

1/2 tsp. salt 

1/2 c. bittersweet chocolate chips-Ghirardelli
1/2c. dried cranberries
1/2c. white chocolate chips
(Use some extra chips/cranberries to press in immediately after coming out of the oven.)



Directions:

1.  Preheat oven to 350 degrees F. Line baking sheet with parchment.



2.  Beat butter and sugars till creamy. Add egg and vanilla.



3.  Add flour, cornstarch, baking soda and salt. Fold in chocolate chunks & cranberries.



4.  Using a cookie scoop drop dough onto sheet.  Mine baked about 14 minutes but check the time depending on the size.  They should be lightly brown.  The tops do not really brown so don't over bake. 

5.  Remove and push in a few extra chips/cranberries.  I got about 20 cookies from this recipe.

CHOPPED SALAD!!!


 In between cheesecakes and brownies, I strongly advise some healthy salads!!! hee hee!  I am loving this new chopper from Pampered Chef.  Not only does it cut veggies with awesome crinkle cuts, it doubles as the perfect salad chopper!!!!  

Our favorites in this salad:
romaine letteuce
spinach
hard boiled eggs
crisp bacon
cashews
red onion
shredded cheese
dried cranberries

Throw in some grilled chicken/shrimp and dinner is served!  Best dressing? Avocado oil and some balsamic drizzled on top!  The avocado oil is from CHOSEN FOODS!

PISTACHIO CRUSTED FRENCH TOAST STUFFED WITH NUTELLA!





THIS RECIPE MAKES 4 FRENCH TOAST "SANDWICHES" -
8 OUNCES ROASTED & SALTED PISTACHIO NUT MEATS, GROUND COARSELY IN THE FOOD PROCESSOR
2 EGGS
NUTELLA FOR EACH "SANDWICH"
8 SLICES OF BREAD (I USED UDI'S GF WHITE-USE ANY KIND YOU LOVE!)
SPLASH HALF & HALF
BUTTER FOR FRYING

POUR THE PISTACHIOS IN ONE BOWL.  
BEAT THE EGGS AND HALF & HALF IN A DIFFERENT BOWL.
SPREAD ABOUT 1-2 TABLESPOONS NUTELLA ON EACH "SANDWICH" AND DIP IT INTO THE EGG, THEN THE PISTACHIOS.  ADD TO A HEATED SKILLET WITH MELTED BUTTER AND FRY UNTIL GOLDEN ON BOTH SIDES.  SERVE WITH POWDERED SUGAR, WHIPPED CREAM AND FRESH FRUIT!

OREO & PEANUT BUTTER BROWNIE CUPS!



MY FRIEND POSTED THIS CUTIE IDEA ON FACEBOOK AND SAID I HAD TO MAKE IT.  WHO AM I TO ARGUE.




1 box brownie mix, I used Pillsbury
24 Oreos
1/2 cup creamy peanut butter
*chopped peanut butter cups!
1. Preheat oven to 350 degrees F. and line 12 muffin cup with paper liners.
2. Prepare brownies by package instructions.  

3. For each cupcake you're going to take an Oreo and spread on some peanut-top with another Oreo and add peanut butter on top of that.  Then sit this little tower in your paper liner.  Repeat for each one.   

4. Pour brownie batter over each stacked Oreo tower and let it spill over the sides of the cookies.  The extra batter I baked in a second muffin tin and laid a whole oreo in the bottom of each!  

5. Bake the muffin tins for about 20-22 minutes at 350. 

6.  Once you remove from the oven, I immediately sprinkled chopped peanut butter cups on top-pressing lightly and placed the whole tray in the fridge so the pb cups wouldn't melt. Cool and serve!
Makes 12 "cupcakes"

TILAPIA BREADED WITH CHIA SEEDS AND COOKED IN AVOCADO OIL

1. DIP TILAPIA IN EGG.
2. DIP TILAPIA IN MIXTURE OF BREAD CRUMBS (I USED GF), PARMESAN CHEESE AND CHIA SEED.
3. HEAT AVOCADO OIL AND PAN FRY FISH UNTIL GOLDEN.
4. SERVE OVER SPINACH DRESSED WITH CASHEW, CRANBERRIES, PAREMSAN CHEESE, OLIVE OIL & BALSAMIC VINEGAR.
YOU CAN ORDER THE CHIA SEEDS AND THE AVOCADO OIL FROM CHOSEN FOODS.  YOU WILL NOT BE DISAPPOINTED. IN FACT, THIS DINNER WILL BE A WEEKLY ADDITION FOR US.  NOT ONLY WAS IT DELICIOUS BUT IT WAS FAST AND HEALTHY, TOO!

BEAT:
1C. SUGAR
1C. BUTTER
ADD:
1 EGG
1 TSP. VANILLA
ADD 2 1/2C. FLOUR

ONCE A DOUGH FORMS, ROLL OUT, CUT SHAPES,  INSERT STICKS AND BAKE AT 350 10-13 MINS DEPENDING ON SIZE.  LET COOL AND DECORATE WITH PINK ROYAL ICING, CRUSHED CONVERSATION HEARTS AND M & M'S!
